Since I haven't been feeling well and sleeping until almost noon, I haven't been eating until later in the day. Its very very bad I know. Yesterday I finally felt well enough to make a salad and roasted italian veggies
This salad had romain, cukes, scallion, red pepper, roma tomato, smoked tofu which is like smoked cheese for me...so good!, and a hard boiled egg. All that was covered with Annie's Woodstock dressing which I just discovered, this dressing is sort of smokey and rich, very good!
Tonight I made a cheezy baked potato with broccoli and cauliflower
It is the dry cheese mix from Go Dairy Free, I had the mix already made in the fridge. I made the potato in the toaster oven and "steamed" the veggies in the microwave in one of those ziplock steamer bags. It was pretty good. I had another salad before this so my dinner was more colorful than this!
For dessert I borrowed a recipe from Chocolate-Covered Katie...Her Five-Minute Chocolate Mousse http://chocolatecoveredkatie.wordpress.com/2009/02/12/mousse-on-the-loose/ and it was so so good!!!
I am excited to try more recipes with silken tofu!

Those veggies look SO GOOD!!! I wish my kiddos would eat more veggies - I love 'em!

Becky...I used Soyatoo "whipped cream" in the can for the topping of the mousse. Its so good. You should let it sit out for 10 mins before using it...but alas I never remember to do that!!! Its great for topping soy ice cream too
